Kō Restaurant

Let Kō seduce you with artful interpretations of Hawaiʻi’s exotic blend of multicultural influences — part China, part Japan, with a dash of the Philippines, Korea and Portugal, rooted in the traditional Hawaiian kitchen. Visitors and locals know this is the place to visit in Wailea. 360 View

Sourcing top-quality produce from local purveyors, Executive Chef Jonathan Pasion sets a lavish feast for the eyes and palette: gleaming cubes of black sesame-sprinkled ahi tuna, aromatic ti leaf-wrapped fresh catch, spicy Chinese stir fry with lotus root… ‘ono (delicious) only begins to describe it.

Take a seat in a roomy banquette under the floating roof of this chic and alluring indoor-outdoor dining room with views of lush gardens and the palms and pool beyond. Start with a pleasingly tart Liliko’i (passionfruit) Margarita, dusted in sweet plum powder and garnished with a fresh orchid. Then let your imagination guide you. Authentic, local, sustainable, rooted in history: Kō reflects this beautiful island palekaiko (paradise) we call home. The name is Hawaiian for sugarcane. Today, Executive Chef Jonathan Pasion leads the culinary masterpiece of Kō restaurant in Wailea. The expansive menu features island family recipes that have been passed down for generations – including Hawaiian, Chinese, Filipino, Portuguese, Korean, and Japanese favorites. By utilizing the island’s fresh produce, meat and seafood, Chef Pasion conjures exciting, modern cuisine that tells the story of Maui’s multicultural plantation past. And every element — the contemporary design, colors, textures, food and drink — intentionally conveys a deep respect and connection to that tradition.

Celebrate Maui culture with us when we cook a laulau. That’s a Native Hawaiian dish, traditionally served in a taro, or luau, leaf. Ours is a modern take on a treasured recipe, always featuring some kind of seafood combination.
