OUR STORY

Authentic, local, sustainable, rooted in history: Kō reflects this beautiful island palekaiko (paradise) we call home. The name is Hawaiian for sugarcane. Today, Executive Chef Jonathan Pasion leads the culinary masterpiece of Kō restaurant in Wailea. The expansive menu features island family recipes that have been passed down for generations – including Hawaiian, Chinese, Filipino, Portuguese, Korean, and Japanese favorites. By utilizing the island’s fresh produce, meat and seafood, Chef Pasion conjures exciting, modern cuisine that tells the story of Maui’s multicultural plantation past. And every element — the contemporary design, colors, textures, food and drink — intentionally conveys a deep respect and connection to that tradition.
