At Kō, every dish is a celebration of Maui’s diverse heritage, inspired by the many cultures that came together during the sugarcane era—Hawaiian, Filipino, Portuguese, Korean, Japanese, and Chinese. Inspired by the spirit of “kaukau time,” when sugarcane workers shared home-cooked meals over lunch and talked story, our menu honors that tradition of connection through food.
